Fukuoka has a distinctive set of riverside cafes called Yattais - little more than mobile carts that, like some origami set in wood, fold out to provide seating for maybe a dozen people. The cooks grill or boil several kinds of food - oden, yakatori, udon, ramen and so on; usually served with beer or saki. Depending on your mood or timing they're a great places to visit after a night out - or a place for a drink and snack before heading off to the bright lights.
